1 CUP SOFTENED BUTTER
1/2 CUP FIRMLY PACKED BROWN SUGAR
1/2 CUP GRANULATED SUGAR
1 LARGE EGG - SEPARATED
2 CUPS FLOUR
1 TBS CINNAMON
1/8 TSP SALT
1.5 CUPS FINELY CHOPPED PECANS
Pre-heat oven to 300 degrees. Beat butter, sugars and egg yolk in a large mixing bowl at medium speed until contents are light and fluffy.
Combine flour, cinnamon and salt. Add to beaten mixture and continue to beat until all is blended (dough will be stiff).
Spread dough evenly in ungreased 15.5 X 10.5 inch pan.
Beat egg white with fork until just foamy. Spread evenly onto the top of dough.
Sprinkle with nuts and press lightly.
Bake 40 to 45 minutes.
WHILE STILL HOT - Cut into 3 inch squares - Then cut each square diagonally into triangles.
Cool in pan. Makes 30 pieces. Excellent at Christmas time!
