Orange Jello Salad

1 #2 can crushed pineapple
1/2 c suger
1 6oz jello (orange is the best, regardless of what Matthew says)
2 c cold water (using ice cubes speeds up the process)
1-1/2 c graged cheddar cheese (I like sharp, but the original recipe calls
for mild)
1 c pecans (chopped)
1 8oz cool whip

Combine first two ingredients and bring to a boil
Add jello and stir until jello is dissolved. Add cold water (w/optional ice cubes)
and refrigerate till slightly thickened. Then add remaining ingredients, folding in the cool whip.
refrigerate (it) overnight for best results

For a great tasting version of the Cheddar/Cottage Cheese Orange, although Cherry is better Recipe use a 3 oz. pkg. of Cherry Jello mixed with a 3 oz. pkg. of Lime Jello instead of the 6 oz Cherry, Orange or whathaveyou Jello of your usual use. WARNING: this combo is definitely not a treat for the eye unless you are doing a Freaky Friday Fright Night of eating. The tongue will tell you as well as this note that this is best. If the recipe is doubled and the ratio of Cherry to Lime Jello at 3:1, the result may look better.
