Mocha Rum Truffles


1 12-oz. Package Nestle Toll House semi-sweet chocolate morsels
½ cup butter, softened
4 egg yolks
2 tablespoons rum*
2 teaspoons instant coffee
confectioner’s sugar

Melt Nestle morsels over hot (not boiling) water; remove from heat but keep chocolate over hot water. Add butter and egg yolks (slowly) while beating with a wire whisk or fork until smooth. In a small bowl, combine rum and coffee. Add chocolate mixture; stir until smooth. Set bowl over an ice bath. Chill 20-25 minutes, stirring occasionally until fudge-like in consistence (yet smooth and creamy). Mixture will be quite thick. Shape into 1” balls and roll in confectioner’s sugar. Let candies stand at room temperature several hours to season. Deliver one piece to Kathleen Linger.


* May substitute Grand Marnier for Grand Marnier Truffles.
