Gingerbread Cookies

Dough Preparation
480 gr flour
225 gr powdered sugar
1 tablespoon unsweetened cocoa
1 teaspoon baking soda
60 gr soft butter
3 tablespoons honey
3 eggs
1 tablespoon rum
ground spices (2T cinnamon, 2T ginger, 1/2t clove, 1/2t allspice)
lemon zest

Warm up honey and soften butter to make them more liquid, mix all ingredients together into a very dense, fairly dry dough. Add more rum if necessary, but try to keep dough as dry as possible.

Let the dough rest in the refrigerator one to two days.

Baking Cookies
1 egg
1 tablespoon water

Roll out rested dough about 1-2mm thick (about 1/16") and cut out with cookie cutter - makes about 50 cookies. Place on a cookie sheet lined with parchment paper and brush with egg mixed with water. Bake about 15 minutes at medium temperature. Cool completely before decorating.

Decorating
1 small egg white
150 gr powdered sugar
lemon juice

Mix all ingredients until you get a smooth thick glaze. Make cake decorating cones out of parchment paper with a tiny hole or use a #1 or #2 Wilton round decorating tip. Fill cones with glaze and decorate cookies. Let dry overnight.
